Today we are making Vegan Rice Crispy Treats!
This was one of the first sweet treats I made as a teenager. My childhood friend loved when I made these. My mother reminded me recently how I would make a pan of these bad boys and slowly eat them all by myself! Yikes! This is an easy treat to put together with no baking skills required and they’re vegan!
Don’t let the word “vegan” make you nervous. It just means there are no animal products in the dish. Making things vegan can sometimes seem daunting because one may think I have to buy all sorts of weird products or it will taste bad. Most of the ingredients in here are recognizable but it does require vegan marshmallows. Non vegan/regular marshmallows contain gelatin which is an animal product. I usually like to add a personal touch to a well known recipe. These come with dried pineapple and crystallized ginger for a tropical summer punch!

Travis’s Tropical Rice Crispies
Recipe:
4 1/2 Cups of Rice Crispy Cereal
1 Bag Dandies Vegan Marshmallows
2 Tbsp Vegan butter/Margarine
2Tbsp Coconut Oil
1 tsp Vanilla
1 cup rough chopped dried pineapple
1/4 cup rough chopped crystallized ginger plus more for garnish
1/4 tsp cinnamon
Directions:
Prepare a 9x9 inch pan lined with parchment or spray with non-stick oil (the parchment allows you to lift the treats out of the pan to easily cut into squares)
In a large microwave safe bowl combine marshmallows, coconut oil and vegan butter/margarine and microwave 30 seconds at a time until marshmallows are completely melted. Stir in between times. (this can vary, it took me 6 times to get everything melted)
Then stir in vanilla and cinnamon to melted marshmallows. Next add chopped pineapple, ginger and rice crispies and stir until combined.
Spread the mixture out in your pan and allow to cool in the fridge for an hour. If you are like me and want immediate gratification, place in the freezer for 20-30 minutes.
Cut into squares,
Optional-Garnish the top with a little more crystallized ginger to serve!
Notes: If you are not vegan and want to use regular marshmallows, go for it. I would still use margarine in the recipe. Save your good butter for other things.
There is no difference in taste with either version. No weird after taste.
