Yes, I did mention box cake mix. Although I adore desserts made from scratch, sometimes time and patience are limited. For your next Friday night taco dinner or small gathering, choose your favorite box cake mix—mine is strawberry or butter flavor—and create your own frosting. It will taste homemade, lol. I also like to replace the water in the box cake recipe with buttermilk or regular milk.
I wanted to share this recipe with you because my beloved Aunt had a knack for elevating a box cake mix by creating her own frosting. You would never suspect it wasn't completely homemade. We eagerly anticipated this cake for holidays and birthdays.
Homemade frosting for your box cake mix!
Ingredients
Ingredients:
1 cup (equivalent to 2 sticks) of unsalted butter, at room temperature
3 1/2 cups of sifted powdered or confectioners' sugar
2 teaspoons of pure vanilla extract
1 cup of milk (or nut-based milk)
2 tablespoons of heavy cream
a pinch of salt
Buttercream Frosting Instructions
Next, follow these steps for making the buttercream frosting:
Beat the butter for 1 minute using the paddle attachment of a stand mixer or a handheld mixer.
Add powdered sugar gradually, mixing until well combined.
Incorporate milk or cream, one tablespoon at a time, until you reach the desired consistency then add salt.
Add vanilla extract or any other flavoring, and mix until fully incorporated.
Continue to beat the frosting on medium speed for 3-5 minutes until it is light and fluffy.
Note: You can incorporate one 8oz box of full-fat cream cheese into the recipe or add a touch of lemon zest and lemon juice, or even an extract of another flavor. This recipe serves as a base, allowing you to customize it with different flavorings to suit your preferences. Enjoy experimenting with it.
